sweet potatoes and spinach......

Sweet Potato Spinach Hash
This is one of my most favorite sides.. First I LOVE shredded hash browns and second I LOVE ketchup. So when I make this side I get the best of both worlds for dinner, and its actually healthy. I treat this as hash browns but with added spinach and minus the potato ;)

Ingredients : 1 sweet potato, 1 bunch of spinach, salt and pepper, low sugar ketchup for dipping

**did y'all know they made low sugar ketchup? Yes, Heinz makes it and it taste the exact same with barely any sugar.

Okay so here is how you make this delish dish!

-shred the sweet potato 
- brown the sweet potato in a skillet on medium heat for 8 min. Use your Misto Olive Oil sprayer and lightly spritz them

- after 8 minutes add fresh spinach, reduce heat to low, stir and cook till spinach is completely soft (maybe 5 more minutes)
- then serve and eat!

***you can eat anything if you just remember there's a healthy way to eating everything
